The Food and Agriculture Organization’s (FAO) and the World Health Organization’s (WHO) 1973 recommendations for protein requirements are shown in a table in Appendix B of Volume 6. They provide a useful model for understanding the protein needs of the Arroyo Hondo population. Though they are based on several sources, most of the figures come from nitrogen-balanced studies – a technique for determining the amount of nitrogen, and hence protein, needed to maintain growth in children and to prevent loss of tissue protein in adults.
